I have no mechanical knowledge I'm affaid, so just fitted a scorpion race exhaust to my motorbike and when revving it is spitting out quite a lot of flames and pops. How would changing the exhaust can do this? It didn't do out before with the standard exhaust?

Probably for 2 main reasons, you have effectively changed the fueling by altering the back pressure in the exhaust. you may need to rejet the carbs, also I expect the original can had more baffles these stop flaming/detonation as well as suppress noise. your new one is probably louder with a more free flowing design.

Carbs or Injection?

What are you revving it to? :)

Doesn't the exhaust manufacturer recommend re jetting the carbs ?

I have a mate who does this all the time to bikes after he's changed exhausts for

people, he has a dyno jet rolling rd which is what i'd do with your bike if it were mine

just to be safe at least
