They're harder than steel knives and therefore will last longer far longer and not need sharpening as quickly as a steel. They also won't rust either. Only problem is, as they are so hard, they are brittle, so if you've got a heavy hand then maybe avoid them. You can't bend them around like steel and if you drop one it might break or chip.
