Does anyone know how to turn on the nice little animations (like the "switch between windows" button)? I went for minimal graphics usage when I installed and can't find how to turn on the animations :(

Have you got your performance index rating?
You can get this from the My Computer properties.
If it's less than 5.0 (IIRC) then Aero isn't enabled and you can stop looking.

I am running it on a dual core machine at work and thats rated at 1.0.

You need silly hardware just for the OS, its just another way of forcing people to upgrade when they dont need too.

I'm running a 1.0 and it's being let down by the graphics card. It's really a media center anyway so I'm not too upset
