I have noticed on ebay there are a lot of cheap screens and dvd players from hong kong. Anyone tried one?
If I got one of those could I then attach a sat nav from one of the mainstream ICE brands, such as kenwood or alpine? I think I am right in thinking all they need is for the screen to have RGB in right? Would the touch screen still work the sat nav?

I would avoid, all the cheap ones that are adertised on ebay are made just over the border from here in China and the quality is poor. I've heard a lot of stories about them overheating, poor sound and poor screen quality.
If you go to THIS THREAD you will see a member bought a Caska branded DVD player off ebay and had problems. This is made by the same factory as all the others you will have seen.
You tend to get what you pay for with electronics, buy cheap and you'll get poor quality.

Check out the ebay seller's feedbacks. If the seller got a lot of positive comment on his product and service. Go for it. From my own experience, I have bought a DVD player which is made in China and I have been using it for over 3 years now. 0 problem at all. And I also have bought PANASONIC microwave last year, only use few times and it is not working already. Any product which is made in China, that does not mean they are all no good.

Totally agree, a huge proportion of the worlds products are made in China and I have personally developed hundreds of products that are made in China and have been to a lot of very high quality Chinese factories.
I also have a lot of experience in the development and production of electronic consumer products (including audio products) in China and from my experience when you cut costs, you start to compromise quality. The branded electronic products (a lot of which are also made in China), will use quality components and will be subject to very high quality assurance standards, as the brands are selling their products based on their quality. The cheaper, non-branded Chinese products however, are selling their products based on cost, so the quality/price of components will be lower and quality assurance of incoming components/finished goods, will not be as stringent.
In the end, you pays your money and takes your choice......
