To skim or not to skim

My engine is in pieces at the moment going through a rebuild and I took the head in to the local engine centre today to get it cleaned, checked its level and pressure tested (as it's not my original head). I don't really want to get it skimmed if it's level as I don't want to need adjustable cams and don't want to change the standard compression at all. I know a lot of people have posted on here don't skim unless really needed, but the guy in the engine centre today said he would never put an engine back together without skimming it due to the marks the old gasket will have made on the head.

 

Can I have some opinions/help please?
