What should I find in my big breather catch tank

I rebuilt the engine myself a couple of years ago and did a compression test in jan when I did my single conversion and got 185-190 on all cylinders so I'm not really concerned about that. I've got the car apart fitting an 25 row oil cooler and some other bits and bobs just a few safety features really before the maunal and solaris go in.

Once it's back together I'll do another compression test just for piece of mind really but I'm sure it's fine.

 

Any other reasons why it may by like this. Like jamie said I'd have thought it was just condensation.
