IIRC the first pic you posted looks correct, the pad needs to sit inside the tabs. If you have fitted them correctly and they are overheating are you sure you don't have a stuck slider?

 

And make sure you use some copper grease and fit the anti-squeal shims!

the metal tab you speak off is the wear indicator, its designed to rub on the disc and make a noise when the pads get low, so you wont cause any problems by bending it slightly, just make sure it will still contact the disc before the pad wears away ;)
