Re-wiring an EGT sensor

My EGT sensor has been unreliable since it was installed, and I think the problem is at the yellow plug in the cabin, since when I bend it over itself the problem goes away. I therefore suspect a loose or otherwise dodgy connection in the yellow plug

Can this be snipped off, stripped and re-wired like a normal wire without screwing things up?

Gaah, confused!

 

Are the metal conductors within the sheathed cable supposed to be touching inside the sheath? That doesn't seem to make sense to me.

 

It's hard to see without much light, but I've basically cut the end off. I can't now see how to strip the metal sheath down. Doh!
